Ingredients:
1 keilbasa sausage (sliced)
1 yellow pepper (sliced in strings and then cut the strings in half)
1 red pepper (same as above)
1 bag fettuccine nests (I used Colavita)
1 cup spaghetti sauce (I used Prego Fresh Mushroom)
1 tspn italian seasoning
1 tspn garlic powder
1/2 cup of salsa con queso (I used Tostitos medium)
Directions:
In a medium non- stick skillet, put in the sausages and cook for 2 - 3 min. Add in both red and yellow peppers, cover and cook until peppers are soft, about 20-25 min. Set aside (covered)
In a small saucepan, add the cup of spaghetti sauce, 1/2 cup of salsa con queso, 1 teaspoon Italian seasoning, and 1 teaspoon garlic powder. Mix together and bring to a low simmer about 5-7 min (continuously stirring)
Prepare the fettuccine nests per the packaging. My packaging stated 5 min. I boiled them for 3 min. So, really it is to your desired tenderness.
Use prongs (plastic coated) or a slotted spoon to take out the nests. Immediately plate.
Spoon the sauce over the nests, and nestle the sausages and peppers in the center.
Garnish with parsley or grated Parmesan cheese (if desired)
