Salmon Hush Puppies

Ingredients:

1 cup yellow cornmeal

1 cup self rising flour

1/2 tsp cayenne pepper

1/2 tsp sea salt

2 tbsp sugar

1 tsp garlic powder

1 small onion, diced

1 cup buttermilk

5-6 fresh chives, chopped

3 Salmon fillets (de-skinned and chopped)

1 large egg

2 cups of oil

Directions:

In a medium bowl, combine the cornmeal, self rising flour, sugar, salt, cayenne pepper, and garlic.

Whisk and then fold in the diced onions and chives.

Add in the buttermilk and egg.

Mix the ingredients until well combined, then mix in the Salmon, but don't over mix.

Pour the oil into a large cast iron skillet (or deep fryer), and heat the oil.

When the oil is hot, spoon the batter using a cookie scoop.

Fry the hush puppies until the are golden brown.

Using tongs, remove the hush puppies from the oil, and place them on a wire rack (with paper towels underneath)

Plate and Enjoy!
