Salmon Croquettes


1 can of Salmon

1 small onion (I only use half of it)

1 egg

1/4 cup of flour

3 tbspns of Mayo

Salt & pepper to taste

Lemon juice

1-2 tbsps of oil


Mix everything together in a bowl. If you have a fresh lemon just cut it in half and squeeze it over, if you have the bottle just shake a few drops in, then salt and pepper.

Pat them out into patties and put them in the oiled, heated skillet until brown on both sides. Sometimes I use vegetable oil and sometimes I use olive oil. Either is fine.
