Roasted Corn


4 ears of corn (Shucked)

1/4 cup of butter (melted, salted or unsalted)

1 tbspn of chili powder

1/3 cup of Cilantro (chopped)

1 lime (cut into fourths)


Preheat oven to 400 degrees

Rub ears of corn with butter, then place on baking sheet for 20-25 min (turning corn at the half way mark), and then turn on broil for 3-5 min (turning corn at the half way mark)

Take out of the oven and brush corn with remaining melted butter (you may have to reheat) and then sprinkle the chili powder over the corn.

Squeeze the lime over the corn and serve!
