Pineapple & Lemon Pepper Shrimp w/Rice


20-28 shrimp (cooked with tail on)

1 tbspn lemon pepper seasoning

1/2 cup pineapple chunks

1/4 cup of juice

1 tbspn olive oil

1/2 lemon

2 pckgs Uncle Ben's Ready Rice (Jasmine)


In a medium sized bowl place shrimp and lemon pepper seasoning, mix until coated.

In a medium skillet, heat up olive oil and place shrimp in skillet for 2 min, then add in pineapple chunks, cook for an additional minute. Squeeze 1/2 lemon on top.

Prepare the rice (90 seconds)

In a bowl, plate rice, shrimp and pineapple chunks and spoon the sauce over the top.

Garnish with cilantro
