1-2 lbs of crab legs
1 tbspn chili powder
1 tspn smoked paprika
2-3 tbs butter
1-2 limes cut in fourths
4 russet potatoes
1 red onion (thinly sliced)
2-3 tbs butter refrigerated
2 -3 mini sweet red pepper (sliced)
2-3 mini sweet orange pepper (sliced)
2-3 mini sweet yellow pepper (sliced)
2 tbspn butter, softened
Salt & pepper to taste
Preheat oven to 425 degrees
Rinse & dry potatoes
Rub softened butter on each potato and sprinkle with kosher salt.
Wrap each potato in aluminum foil, put them on baking sheet and place in oven until a fork can easily go through about an 1hr - 1hr and half depending on the size of the potatoes.
In a medium skillet, melt butter, place onion and peppers. Cook until softened and set aside.
In large skillet, melt butter and then put in chili powder and smoked paprika. Swirl the pan to mix.
Place in crab legs with tongs. Coat on both sides and place the side (on parchment paper) repeat until all crab legs have been coated.
Plate the crab legs, squeeze lime over them.
Slice baked potato down the center and place a pat of butter and then the red onion and sweet pepper medley on top. Salt &pepper to taste
