Bison Meatballs

Ingredients:

Meatballs

1lb ground bison (makes 12 meatballs, I had 2lbs because the way my kids' appetites are set up-it's needed)

1 red onion

1 tbspn of thyme

1 tbspn of basil

1 tbspn of brown sugar

1 tbspn of oregano

1 tsp of smoked paprika

1 tsp salt (I use sea salt)

1 tsp of cumin

1 tsp of pepper

1 clove of garlic (chopped)

Rice

1-2 packages of Uncle Bens Jasmine Ready Rice

2-3 tablespoons of Kerry Gold garlic and herb butter

2 -3 cups of baby spinach

Salt & pepper for seasoning

Directions:

Meatballs

Mix everything together in a bowl and scoop out meat to make medium sized meatballs (of course you can make them as big as you would like)

I like to use a muffin pan for my meatballs (spray with olive oil cooking spray) , this way the shape holds and all the juices stay contained in the individual cups!

Bake for 15-20 min. At the 15 min mark I added gruyère cheese on top and back in until it melted.

Rice

Add the rice and butter to the skillet and then add the spinach.

Mix around with a spatula until spinach is wilted and done. Then season with salt & pepper to taste.

Plate and serve!
