Apple White Chocolate Chip Cookies

Ingredients:

1 1/2 cup apple, peeled and diced (I used Fuji apples)

1 tsp baking soda

3/4 cup unsalted butter, room temperature

2 cups flour

1/2 tsp salt

1/2 tsp apple pie spice

1/2 up light brown sugar

1/4 cup white chocolate chip

1/2 cup sugar

1 egg

1 tsp vanilla extract

Directions:

Preheat oven to 350 degrees

In small mixing bowl, combine the flour and baking soda, salt, and apple pie spice and set aside.

In a medium mixing bowl, add room temperature butter and both sugars. Beat with medium speed, then add in the egg and vanilla extract. Continue to beat with medium speed until completely combined.

Add in the flour mixture slowly, half at a time, mixing with low speed each time until combined.

Fold in the apples and chocolate chips.

Spray baking sheet with cooking spray, or line with parchment paper. Place about a tablespoon of dough for each cookie a couple inches apart on the sheet.

Bake for approximately 14 minutes. Allow to cool on the sheet for 5 minutes, then remove to continue cooling on a wire rack.
